What is RM value in desi ghee?

The Reichert Meissl Value is a test developed by scientist Reichert Meissl. This test is used to assess the purity of ghee by measuring the range of volatile fatty acids present, which should ideally fall between 26 and 30. By employing this test, it becomes possible to detect any fraudulent mixing or adulteration of oil or fat (excluding milk fat) in ghee. A value below 26 indicates the presence of adulteration in the ghee.

To draw a comparison, the purity of gold is indicated by its carat. For instance, if gold is classified as 24 carats, it signifies the highest level of purity, without any mixture or inclusion of other elements like metals. Similarly, the RM value of desi ghee denotes the purity level of the ghee itself.
